Then go to inventory and put on the helmet. Then back out of inventory and just take off running. A second or two later the mask will appear under the helmet. I have tried 4 or 5 different masks and it works with everyone I tried. This trick can also be done to put on sunglasses with a mask. Just put the shades on instead of the helmet.
I'm not sure about masks, but your player will automatically put on a helmet if you get on a motorcycle and press nothing for a few seconds. Apparently there is a glitch where you can wear a mask and a helmet at the same time, see here
How do you put your helmet on in GTA 5 Online? As far as I know, there is no quick button to put on masks and what not. However you can equip masks helmets and other accessories by using the interactive menu by holding down the touchpad, going to inventory, and accessories.

If you wanted a helmet, you had to get off the bike and then get back on to start the process over. You have that same option in GTA 5 but every time you stop, your character attempts to put on another helmet.

I find that sometimes you have to sit on the bike for about 30 seconds without moving for your character to put on their helmet. this. Sit for a second and it should happen. In the interaction menu, go to accessories then the bottom two options are for putting helmets on.
